Japan is home to countless varieties of ramen. Among them, "Yokohama Iekei Ramen" has become one of the most beloved styles in the country today.
Iekei Ramen traces its origins to Yoshimura-ya in Yokohama, founded in 1974. Through the dedication of its disciples, this distinctive style spread across Japan and gained nationwide fame.
Our restaurant is operated by a ramen craftsman who was entrusted with managing Honmoku-ya — the second shop of the legendary Yoshimura-ya. The founding head chef trained under this lineage, and when we opened in 2005, we quickly rose to become one of the most celebrated ramen shops in Japan, earning a Top 4 ranking among ramen restaurants nationwide.
While there are said to be approximately 3,000 restaurants across Japan claiming to serve Yokohama Iekei Ramen, only a handful truly preserve the original flavor.
At Tsubasa-ya, you can savor the defining characteristic of Iekei — a rich tonkotsu-shoyu broth, a harmonious fusion of pork bone and soy sauce. Come experience the genuine Yokohama Iekei Ramen, crafted by a true ramen artisan.
